Growing up, my dad would make these Indian panko shrimps for birthday, holidays or treat yourself dinners. It’s comforting as the spices have a earthy, nutty, sweet taste. Add an optional drizzle of tamarind sauce and you’ve done it!

This panko shrimp recipe is ready in 15 minutes. My dad will normally make a simple fried rice type dish to serve with so if you have any extra eggs and leftover rice I highly recommend. Of course add some greens for health 😉.

Ingredients

serving size 4

Instructions

  • In a bowl, mix 4 tbsp all purpose flour and 4 Tbsp cornstarch. Season with a pinch of salt and pepper. In a separate bowl, crack 2 eggs and mix well. Season the eggs with a pinch of salt and pepper. In a large shallow bowl or plate add 1 cup panko, 1 tsp cumin, 1 tsp garam masala, 1/2 tsp turmeric, 1/2 tsp onion powder, 1/2 tsp salt and 1/2 tsp black pepper. Mix well. (Put the bowls in order: Flour, Eggs and lastly panko.)
  • Evenly coat shrimp into flour mixture first, shaking off any excess flour. Then evenly coat the shrimp with the beaten eggs. Then, generously coat the shrimp with the seasoned panko. Set aside the shrimps on a plate while coating the rest.
  • In a large pan, heat 4 Tbsp oil over medium-high heat.  Once hot, add the shrimp and cook for 3-4 minutes per side until golden brown (Do in batches if needed)
  • Remove shrimp from heat and enjoy!
