Our soy peanut butter tofu has a satisfying bite; the tofu is light & crunchy on the outside and soft on the inside. Then coated with a homemade peanut sauce, a staple sauce in this household. I served this tofu dish with a bowl of white rice, sautéed zucchini and chopped peanuts on top for extra crunch. Perfection!

Soy Sauce Peanut Butter Tofu
Ingredients
Serving size: 2
- 8 oz extra firm tofu
- 3 Tbsp low sodium soy sauce
- 2 Tbsp peanut butter creamy reduced fat
- 3 garlic cloves; peeled & minced
- 1/2 tsp sesame oil
- 1/2 cup cornstarch
- Salt and pepper
- 2 Tbsp Cooking oil
- Chopped Peanuts for topping
Instructions
- Remove 8oz extra firm tofu from its packaging. Use paper towels or a clean dishcloth and wrap it around the tofu. Put something on top (A bowl or plate) to “press” or absorb the moisture while you prep the sauce.
- In a small bowl add 3 Tbsp low sodium soy sauce, 2 Tbsp reduced fat peanut butter, 3 minced garlic cloves, 1/2 tsp sesame oil and mix. Set aside
- Cut the tofu into cubes(about .75 inch cubes). Add 1/2 cup cornstarch onto a plate. Place the tofu cubes on the plate and gently mix until all sides are coated with cornstarch (do in batches if needed).
- Drizzle in the cooking oil in a large nonstick pan over medium high heat. Once hot, cook the tofu about 8-10 minutes, flipping the tofu often getting every side lightly fried. Transfer to a plate, season the tofu with a pinch of salt and pepper
- In the same pan, pour in the sauce and cook about 1 minute; mixing often. Turn off the heat and add the tofu back to the pan. Gently mix until coated. Enjoy with rice, noodles, in a wrap or salad and more!

This sounds delicious and makes me think of satay, which is a fave sauce of mine.
Oh man I love chicken satay! It is very similar (minus the coconut milk).
Thank you! 🙏🏽😊
