Chicken & Mushroom Farfalle Pasta (Easy Recipe)

This farfalle pasta dish has a super creamy sauce loaded with shallots caramelized with balsamic vinegar, mushrooms, spinach and beautifully browned chicken.

Our chicken & mushroom pasta has a oat milk based sauce that comes together very easily. Plus, its a bit healthier than other pastas as we use unflavored oat milk as the cream, instead of half and half or heavy cream. Oat cream alternatives have less saturated fat then a standard dairy cream.

Chicken & Mushroom Farfalle Pasta (Easy Recipe)

Ingredients

  • 2 Tbsp cooking oil
  • 1 Tbsp unsalted butter
  • 1 lb chicken breast, boneless & skinless
  • 1 shallot, peeled and thinly sliced
  • 1 Tbsp balsamic vinegar
  • 1 tsp sugar
  • 1 cup Bella mushrooms, cleaned and sliced
  • 3 garlic cloves, peeled and minced
  • 1 cup spinach
  • 1 cup unflavored Oat Milk
  • 2/3 cup sharp White Cheddar, shredded (Plus more for topping; optional)
  • Salt and pepper
  • 4 oz farfalle pasta (2 servings)

Instructions

  • Cook farfalle pasta according to the package instructions.
  • Cut the chicken breast into 1″ pieces and season with a nice pinch of salt and black pepper.
  • Heat 1 tablespoon oil on medium-high heat in a large skillet. Cook the chicken pieces until browned on both sides, about 2-3 minutes on each side. Move the chicken to a plate, season with salt and pepper and set aside.
  • Drizzle 1 Tbsp of oil to the same pan. Add sliced shallots and cook on medium heat for about 3 minutes, stirring occasionally.
  • Stir in the balsamic vinegar and sugar and cook for 3 minutes, continuing to stir. Season with a pinch of salt and pepper. When done cooking, add caramelized shallots to a plate.
  • Heat 1 Tbsp butter in the same skillet on medium heat. Add sliced mushrooms. Season with a pinch of salt and pepper. Cook for about 5 minutes, occasionally stirring, until mushrooms are browned. Add in the minced garlic, sauté for 30 seconds.
  • Mix in the spinach until combined. Add in the oat milk bring to a boil. Once boiling, reduce to simmer.
  • Add in the shredded cheddar cheese and 1/4 teaspoon salt. Stir until the cheese melts.
  • Mix in the caramelized shallots, chicken and cooked and drained farfalle pasta to the sauce. Cook on low for 1-2 minutes. Taste, season with salt and pepper to preference, if needed.
  • Enjoy (Optional: serve with more shredded white cheddar cheese).
