Candied jalapeño cornbread muffins, using Cafe Du Monde beignet mix, is incredibly easy and you will love the amount of heat and sweetness. The perfect side dish for a comfy meal!

Why use Cafe du Monde mix?
One day I thought, why can’t I use this beignet mix for other things? It has Enriched wheat flour, enriched barley flour, milk, buttermilk, salt, sugar, leavening (baking powder, baking soda, and/or yeast), natural and artificial flavoring; all the fixings needed for a delicious cornbread; combined with some cornmeal.

What is candied jalapeños?
Candied jalapeños is essentially pickling jalapeños with sugar and spices. You can enjoy them with cream cheese and crackers, on burgers, into egg salad sandwiches.. so many ways to use these babies! Sweet Jalapeño Cornbread Muffins Recipe
yields 12 muffins
Ingredients
- 1 1/4 cup buttermilk
- 1 tsp vanilla extract
- 1/2 – 2/3 cup brown sugar (depending on how sweet you’d like)
- 1 cup Cafe du Monde beignet mix
- 1 cup yellow cornmeal
- 1 tsp salt
- 1/4 cup chopped candied jalapeños for a bit of spice (or chopped de-seed jalepenos for less sweetness)
- Oil for greasing pan
Instructions
- Preheat oven to 350 degrees. Grease a muffin pan with oil or cooking spray.
- Whisk the buttermilk, vanilla and brown sugar into a large bowl.
- In another bowl mix together the flour, cornmeal, salt and chopped candied jalapeños
- Add the dry ingredients to the wet ingredient bowl and mix until combined
- Spoon into prepared muffin cups. Bake at 350° for 18-20 minutes, until set and tops are lightly browned. Let cool for 5 minutes in pan before removing. Enjoy with butter and a sprinkle of salt!
