I am that person who can have soup any day or time of the year. This filling soup recipe can be enjoyed as a lunch or dinner option. Sometimes I’ll top my soup with some crumbled up sausages and dip with toasted garlic bread, it’s so good!

Ingredients You’ll Need
- cooking oil
- garlic cloves
- paprika
- Italian seasoning
- chili flakes
- yellow onion, peeled and diced
- green onion
- canned garbanzo beans, low sodium
- potato
- vegetable broth low sodium
- salt & black pepper

In our household we keep a few cans of garbanzo beans on hand because they are so versatile! We use low sodium chickpeas and low sodium broth to keep the salt levels low.

Easy Garbanzo Bean Soup
Servings 2-3
Ingredients
- 1 Tbsp cooking oil
- 3 large garlic cloves, peeled and minced
- 1 tsp paprika
- 1 tsp Italian seasoning
- 1/4 tsp chili flakes
- 1/2 cup yellow onion, peeled and diced
- 1-2 green onions, discard roots, diced ,separating the white pieces from the green
- 2 can garbanzo beans, low sodium
- 1 cup potato, peeled and diced into 1/2 inch pieces
- 2 cups vegetable broth low sodium
- salt & black pepper
Instructions
- Prep ingredients according to the list above.
- Add one can of the garbanzo beans with the liquid to a blender and blend until smooth.
- Heat the cooking oil in a large pot over medium heat. Add in the diced onion and cook for 3 minutes, stirring occasionally. Mix in the garlic, the minced white part of the green onion and sauté for about 1 minute. Season with a pinch of salt and pepper.
- Add the blended garbanzo beans to the pan. Drain the second can of garbanzo beans and add to the pan. Stir in the diced potato, paprika, Italian seasoning, chili flakes and season with a pinch of salt and pepper. Pour in the broth and stir well.
- Turn the heat up to medium high, and bring the mixture to a boil. Once boiling, turn the heat down to medium low. Put a lid on the pot & simmer for 22 – 25 minutes, stirring occasionally, until the potatoes are cooked.
- Taste the soup and season with salt and pepper to your taste preference.
- Enjoy warm and top with the chopped green onions and toasted garlic bread for dipping!
