Savory Coconut Rice Stir Fry
I had leftover cooked rice & coconut milk and thought, can I make a savory coconut rice bowl for dinner? It’s comforting, creamy and full of ground pork and vegetables. Everything you want in a tasty dinner!

The coconut milk gives this rice dish the most amazing creamy texture, similar to a Thai curry. This recipe is very versatile too. Use any stir fry veggies you have in the fridge. Or you can substitute ground pork with ground beef, turkey, chicken or tofu instead if preferred!
Ingredients Needed for savory coconut rice
- Ground pork
- low sodium soy sauce
- cooked white rice
- coconut milk
- cooking oil
- shallot
- vegetables, I used Carrot & mushrooms
- garlic cloves
- ginger
- curry powder
- spinach
- salt and pepper
- Optional: Top with chopped peanuts and green onions

Savory Coconut Rice With Pork & Vegetables
Serving Size 3-4
Ingredients
- 1 tbsp cooking oil
- 10-12 oz Ground pork
- 1 shallot, peeled & chopped
- 2 cup chopped vegetables (carrots, mushrooms, bell peppers, broccoli, etc)
- 3 cloves garlic, peeled & minced
- 2 tsp fresh ginger, grated
- 2 tsp curry powder
- 2 cups cooked white rice
- 3/4 cup coconut milk
- 1 1/2 cup spinach
- 3 Tbsp low sodium soy sauce
- salt and pepper
- Optional: Top with chopped peanuts and green onions
Instructions
- Heat the cooking oil in a large skillet over medium high heat. Once hot, add the shallots, saute for 3 minutes. Add the ground pork, breaking up the meat. Cook for 5-6 minutes until browned. Season with a pinch of salt a pepper
- Add the 2 cup of chopped vegetables and cook until softened a bit, 3-4 minutes. Add the garlic, ginger, and curry powder and sauté for 1 minute, stirring.
- Add in the cooked rice, coconut milk, soy sauce, spinach and mix. Cook for 1-2 more minutes. Taste, season with salt and pepper if preferred
- Serve warm topped with chopped peanuts and green onions.
