Thai Chili Egg Rolls (Easy Recipe)
Thai Chili Egg Rolls are a deliciously easy twist on a classic dish. We use a Thai chili based sauce to season the eggs, ground Turkey and a cabbage slaw. All bundled up in a crunchy flour tortilla with a Thai chili lime crema drizzle on top!

This recipe includes many ingredients that you may already have! Including garlic, ginger, eggs, soy sauce, mayo, cooking oil, salt and pepper. Instead of using an egg roll wrapper, we use flour tortillas and bake them resulting in deliciously crunchy shell. Perfect for those days when you want to make something easy and flavorful .

Thai Chili Egg Rolls (Easy Recipe)
serving 2-3
Ingredients
- 1 tsp fresh Ginger, peeled and zested
- 3 Garlic cloves, peeled and minced
- 1 green onion, finely chopped separating the whites from the green
- 1 Lime, quarter
- 2 Eggs
- 2 Tbsp Sweet Thai Chili Sauce
- 3 tsp Soy Sauce- low sodium
- 10 oz Ground Turkey
- 1 1/2 cup Coleslaw Mix
- 6 Flour Tortillas
- 2 Tbsp Mayonnaise
- Kosher Salt and pepper
- Cooking Oil
Instructions
- Adjust rack to middle position and preheat oven to 425 degrees. Prep produce based off ingredients list above
- Crack two eggs into a small bowl. add in soy sauce and 1 Tbsp chili sauce. whisk until combined
- Heat a drizzle of oil in a large pan over medium-high heat. Add the ground turkey and season with salt and pepper. Break up and cook until beginning to brown, 6-8 minutes. Add the coleslaw mix, zested ginger, minced garlic and scallion whites; cook, until softened, 2-3 minutes.
- Move mixture to one side of pan. Add the chili egg mixture to empty side and cook, stirring, until eggs begins to cook. Combine the turkey and egg mixture and cook until eggs are scrambled, 1-2 minutes more. Take off heat
- Brush some cooking oil on both sides of the tortilla’s. Place about 1/2 cup of the turkey filling on one half of each tortilla. Roll up tortillas and place seam sides down, on oiled baking dish or sheet. Bake 8-12 minutes, until golden brown
- In a small bowl, combine 1 tbsp chili sauce with 2 tbsp mayonnaise and the juice of half the lime. Season with salt and pepper. Drizzle the chili lime sauce on the egg rolls and top with the scallion greens and remaining lime wedges.
