Easy Vegetarian Thai Peanut Noodles

Easy Vegetarian Thai Peanut noodles in a flavorful, homemade peanut sauce and filled with mushrooms, zucchini, chives and carrots.

If you’ve ever had Thai Chicken Satay with a peanut dipping sauce, you know how tasty a peanut sauce can be. Peanut sauce can be very simple to make and this recipe includes very few ingredients. All you need is:

Now you toss that sauce with some linguine noodles, sautéed vegetables, chives. You now got yourself a very tasty weeknight meal that you will want to make again and again.

Easy Vegetarian Thai Peanut Noodles

Serving size: 2-3, prep time: 5 minutes, cook time: 15 minutes

Ingredients

  • 3 cloves large Garlic cloves, minced
  • 1 cup button mushrooms, cleaned, trim and quarter
  • 1 Zucchini, cleaned, cut into 1/2 inch thick half moons
  • 1 bunch chives, minced, (save some for topping)
  • 1 cup carrots, shredded on larger hole
  • 6 oz linguine noodle
  • Salt and pepper
  • Cooking oil
  • serve with remaining lime wedges, sesame seeds or peanuts for topping

Peanut sauce

Instructions

  1. Prep fresh ingredients according to ingredient list above. Boil the linguine noodles per package instructions.
  2. In a large skillet, add a drizzle of oil over medium high heat. Add the cut zucchini and mushrooms. Sauté for 5-8 minutes. Season with salt and pepper. Add minced garlic and shredded carrots and cook 30 seconds. Turn off heat
  3. While the noodles and veggies are cooking, add all sauce ingredients to a bowl and mix together until fully incorporated (optional: add to a blender and mix until a smooth)
  4. Add the noodles and minced chives to the skillet with the veggies. Pour the peanut sauce over and mix well. Serve at room temperature or cook for about a 1-2 minutes on medium heat. Transfer to bowls and top with chives and serve with extra lime wedges.
