Healthy Carrot & Sprouts Slaw (No Mayo!)
This healthy slaw uses carrot, alfalfa sprouts, green onions, cilantro and absolutely NO mayo! I love the freshness and bursts of flavor that comes from such a simple dish!

All you need to create this healthy slaw is sprouts, shredded carrots, green onions and cilantro. The dressing consists of extra virgin olive oil, rice vinegar, honey and low sodium soy sauce. The best part about this recipe…. there is absolutely NO MAYO, making it healthy without sacrificing the flavor.
My favorite way to enjoy my carrot & sprouts slaw is on top of tacos, tostadas, sloppy Joe’s, burgers or to enjoy as a fresh Asian style salad!

Healthy Carrot & Sprouts Slaw Recipe
Fresh Ingredients
- 1 cup alfalfa sprouts
- 1/2 cup shredded carrots
- 1/2 cilantro, fresh & chopped
- 3 green onions, chopped
Dressing ingredients
- 2 tsp extra virgin olive oil
- 1 tsp low sodium soy sauce
- 2 tsp rice vinegar
- 1 tsp honey
Instructions
- Prep your fresh ingredients and add them to a medium size bowl
- Mix together the dressing ingredients in a small bowl.
- When you’re ready to serve, mix the dressing in thoroughly. Enjoy!
