Instructions

  • In a large bowl, add the sugar, yeast and warm water. Mix and cover the bowl with a clean kitchen towel for ten minutes until the mixture forms a froth.
  • In another large bowl, add the flour and the salt. Mix thoroughly.
  • Pour the flour bowl ingredients into the yeast mixture bowl. Knead using your hands for 5 minutes, until the dough is smooth and not sticky. (Add flour 1 tsp at a time if too sticky.)
  • Add the olive oil and knead for three more minutes while forming a dough ball. Grease a large bowl and add the dough ball. Cover the bowl with the towel. Let it rise in a warm place for 90 minutes or until double in size.
  • Grease a 10 inch cast iron skillet and set aside.
  • Once the dough has risen, put some flour on clean hands and punch the dough. Knead for 1 more minute.
  • Add more flour to your hands; place the dough into the greased cast iron. Use your hands to press the dough into a round shape. (About half an inch high and about 6-7 inch across.)
  • Cover the dough again with the towel and let it rise for 30 minutes.
  • Preheat oven to 375F, adjust rack to middle top position.
  • In a medium skillet over medium heat, add the oil and butter. When hot, add the onions. Cook until the onions are browned (not burnt) and softened; about 6-8 minutes stirring often.
  • Lower the heat and stir in the balsamic vinegar and sugar and cook for 3 minutes, continuing to stir often. Season with a pinch of salt and pepper. Turn off the heat and add the onions to a plate.
  • Put a little olive oil on clean fingers and work the risen dough to the edges of the cast iron. Use your fingers to press dimples on top of the dough.
  • Top the dough evenly with the caramelized onions.
  • Bake the focaccia bread for 14 to 16 minutes until it is golden in color. (Bake a few minutes more if you prefer it crispier; be careful of burning the onion.)
  • Sprinkle with a pinch of salt, pepper and an optional drizzle of balsamic glaze & enjoy!

  • This seems great! I’ve had French onion focaccia bread. It is one of my favorites. I would like to try your recipe. Since I like Balsamic vinegar, I am thinking your bread might be one of my favorites.

    • Thank you!! French onion focaccia bread sounds amazing and it does seem similar! The balsamic adds a nice sour taste to the caramelized onion’s. So good
