Trader Joe’s has a Eggplant Garlic Spread that is inspired by a traditional Bulgarian recipe. Its made with fresh eggplant, garlic, and sweet red peppers. The jar says to use it as a spread on sandwiches, toast, or crackers. You can also use it in soups and stews for a bit of flavor!

I was picking up things to make a pizza and saw this eggplant garlic spread with red peppers. I thought to myself, this sounds like it would be delicious on a pizza! Turns out, my thoughts were correct!


My Trader Joe’s Eggplant Garlic Spread Review
The flavors of the spread are subtle, but tasty! You definitely taste the tomato paste and sweet red peppers. I made a pizza using leftover pork bulgogi and it was so good! The spread paired really well with the pork because the bulgogi was so flavorful. To me, the main character of the pizza was the bulgogi and the pizza dough. The eggplant sauce was nice as the supporting character to the dish.
I would use this again but I wouldn’t go out of my way to get it. The sauce was a great base and a good tool to have in the fridge. I would definitely go out of my way to make a bulgogi pizza though 😉 Recipe I used below.


Easy Bulgogi Pizza Recipe
1 personal pizza
Ingredients
- 1 Jar Trader Joe’s Eggplant Garlic Red Pepper Spread
- 1 bag of Trader Joes pizza dough (I used half a bag; use a whole bag for 2 pizzas or one huge pizza)
- Toppings: Zucchini Squash, cut into half moons
- white onion, thinly sliced
- 1 garlic cloves, minced
- Pork bulgogi
- Sliced pepper jack cheese
- salt and pepper
- cooking oil
- Flour for dusting
Instructions
- Preheat the oven to 475 degree F. Adjust oven rack to middle top position. Take out the dough (I used half the bag and froze the other half) and leave at room temperature on a lightly floured surface for 30 minutes.
- Grease a large cookie sheet with oil.
- In a medium bowl, add the sliced onions and zucchini. Add a drizzle of olive oil, salt and pepper; mix to combine.
- Add a light dust of flour on the baking sheet. Add the pizza dough and roll out the dough thin to your preference. Add a few spoonfuls of the eggplant spread and evenly spread out. Top with slices of pepper jack cheese, the zucchini onion mixture and the bulgogi pieces.
- Sprinkle the top with the minced garlic and a pinch of salt and pepper.
- Cook for 10 minutes until cooked to your preference! Enjoy!
