Easy Poached Shredded Chicken
I LOVE this recipe for poaching chicken whenever i need shredded chicken for a recipe. Its super easy and always comes out tasty. Plus, you’ve now made fresh chicken broth! Its a win win. Shredded Chicken Taquitos
Ingredients
- 2 cups cooked shredded chicken
- 1-cup shredded cheese (I used extra sharp white cheddar)
- 1/4 cup salsa of your choice
- 1/4 cup sour cream
- 1 cup baby spinach leaves , chopped
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/4 tsp chili powder
- salt and freshly ground black pepper for taste
- 12-15 corn tortillas
Instructions
- Preheat oven to 425 degrees F.
- Add the ingredients ,except the tortillas, in a mixing bowl and toss to combine. Taste and season, if needed.
- Using a small pan, heat a tsp of oil on medium heat. Add one tortilla at a time and cook for 1 minute per side. This will help the corn tortilla roll without cracking.
- Lightly oil an oven safe pan. Place a spoonful of filling in a line along each tortilla and roll tightly. Secure with a toothpick if needed. Place seam side down on the oven safe pan.
- Lightly brush them with oil. Bake for 15-20 minutes or until the shells are crispy. Season with a pinch of salt and pepper (optional)
- Serve warm with a crema, onions, guacamole, sour cream, salsa, hot sauce, etc…
